Black Bean Fajita Casserole

This Tex-Mex inspired casserole combines so many great ingredients in one easy dish. If you like it spicy, turn up the heat with your choice of salsa. 

Steps

  1. Preheat oven to 425°F. Thaw vegetables in microwave (for faster cook time).
  2. Spread rice in bottom of 2-2 ½ qt baking dish. In order, top with chicken, vegetables, salsa, soup and cheese. Top with tortilla chips. 
  3. Bake 15-20 minutes, or until cheese is bubbly and chips start to brown.
